Pork and Fennel Ragu

This quick ragu exemplifies my “double up-halvsies” trick. It’s got loads of onion and fennel, just a bit of pork for flavor, and half the pasta you’re used to. Yet it’s so hearty you’ll never miss the extra meat and pasta.

1 tablespoon extra virgin olive oil
2 cups onion, finely chopped
2 cups fennel bulbs, finely chopped
2 cloves garlic, minced
1 tablespoon fennel seeds, slightly crushed
1 teaspoon dried oregano
½ teaspoon red pepper flakes
8 ounces lean ground pork
¼ cup dry white wine
sea salt and freshly ground black pepper
(1) 14-ounce can diced tomatoes, drained
2 cups low-sodium chicken or vegetable stock
8 ounces rigatoni, preferably whole grain

Bring a large pot of salted water to a boil.

Heat a large non nonstick skillet over medium-high heat. Swirl in olive oil and add onion, fennel and garlic. Sauté 5 minutes, until onion is translucent.

Add fennel seeds, oregano, pepper flakes, a pinch of salt and pepper, and pork to pan with onions and fennel. Stir to combine and brown pork for 3-4 minutes, chopping it up with the edge of a stiff spatula. Pour in wine and scrape up any bits stuck to the bottom of the pan while wine evaporates.

Add tomato and stock and bring to a boil. Reduce heat to medium-low and simmer 15 minutes (or more if you have time), stirring occasionally. While sauce is simmering, boil pasta, drain and return to pot. Scrape sauce into pot with pasta and toss to coat well.

Serves 4

Easy Mushroom Ragu

This easy vegetarian mushroom ragu has plenty of meaty main-dish heft. It’s also an incredibly versatile little number. Toss it with pasta, serve it over polenta, or spoon it onto crostini smeared with goat cheese. The optional mascarpone lends extra richness to this mushroom ragu, but skip it to make it a vegan dish.

5 cloves garlic, roughly chopped
1-1/2 pounds wild mushrooms (or cremini), cut into thick slices
2 teaspoons minced thyme
¼ cup dry marsala
2 tablespoons mascarpone cheese (optional)
Sea salt and freshly ground pepper
1 tablespoon finely chopped parsley

Heat olive oil in a large saute pan over medium heat and add shallot. Cook for 5 minutes, until shallot is a deep golden brown. Add garlic and cook another 2 minutes, until softened. Add mushrooms and thyme to pan, and saute for 8-10 minutes, until mushrooms are golden brown.

Pour in marsala and scrape up any bits stuck to the pan. Cook for 2-3 minutes, until most of the liquid is evaporated. Swirl in mascarpone, season with salt and pepper, and sprinkle with parsley.

Serves 4.

Short Rib and Cremini Ragu

If you love fork-tender ragu, add short ribs to your repertoire. Back home in Missoula, Montana, on the search for local meat, I met Scott Barger of Mannix Brothers’ Grass Finished Beef, a fifth-generation cattle rancher in the Blackfoot Valley. He said that cuts like short ribs often end up going into their ground beef, simply because folks don’t know how to use them. Like many tougher cuts, short ribs require a longer cooking time for the connective tissues to melt. When they do, the meat becomes fall-apart tender, infusing the sauce with an incredible richness. This ragu can be served two ways: with the rib portions intact over our Creamy Corn Polenta, or you can remove the ribs from the sauce, and once cool enough to handle, shred the meat, discarding bones and excess fat. Toss the meat sauce with a long pasta noodle like fettuccine or tagliatelle.
