What an awesome meal. Had this for dinner & my 2 & 5 year olds loved it! It just seems to take me twice as long to cook the egg mixture than the directions call for. But well worth it!
So glad y’all liked it! And you’re right it’s well worth the time. I adjust the heat depending on how much time I have to cook the eggs. If I have time, I’ll cook them nice and slow … which gives them a lovely texture almost like a firm custard–probably similar to what you experienced. The texture will be a bit more “eggy” if you cook it faster over a higher heat, but still very good.
