Mustard-Shallot Vinaigrette

This is a French-inspired vinaigrette recipe that I love to use for hearty, rustic salads. Once you’ve made a jar of this, you’ll never go back to store-bought salad dressing.

  1. That looks very good – gonna try it tonight, drizzled over green beans frozen from the farm last summer. I was in your neck of the woods last Thursday/Friday. My husband had a conference in Napa so I tagged along. Gorgeous time of year and the sun was actually shining, the grass was coming up green, the mustard was blooming. I packed in a bunch of activities for my two days – Schramsberg (a recommendation from a friend I work with who used to live in Santa Rosa). A road trip from Napa to Healdsburg where I stopped whenever I wanted to take photos. Had lunch in Healdsburg – one of my friends up here told me her husband proposed to her in that town square. Mr. E recommended Vincent Arroyo Winery for the next day and what a great experience that was. Robert Louis Stevenson museum where we met the sweetest little lady who was docent – had a long conversation with her about our area, which she had visited. You are lucky to live in such a beautiful area just chock full of history and nice people. steph

  3. He is out of town too. 🙂 Thank goodness for email or I’d have missed Vincent Arroyo. I’m going to “open that bottle” tomorrow night – I got the 2007 Petite Syrah. My friend who recommended Schramsberg was appalled that it cost me $40 to go and felt bad that he recommended it to me but I enjoyed it and didn’t buy any sparkling wine so really . . . it all evened out because I spent $80 at Vincent Arroyo. 🙂 I told my husband – that’s your anniversary present to me (our 21st is April 23). Oh – the vinaigrette is very good – I’m taking some to work with me for the hospital salad bar.
