These chicken thighs come together without much fuss, but the honey and balsamic vinegar give them a surprisingly complex depth of flavor … not to mention a beautiful golden-bronze hue.

I cooked this tonight and really loved it!
Yea! Glad you liked it, Charlotte
I do this in the pressure cooker. 8 minutes. It’s great!
Great idea, DeeDee! LOVE the pressure cooker …
I made this last night and it turned out well. Really rich, wonderful flavors in the sauce. It was my first time making chicken ever! (I’m a pescetarian newly married to a big chicken fan.) So that’s a testament to how easy and clear the recipe was. My sauce seized up in those last 2 minutes; I must have had it too hot and wasn’t watching closely. I’d urge others to stir and keep an eye on it. Thank you! I’ll definitely make it again.
I’m so glad, Eva! Here are a few more of my favorite chicken dishes for you and your husband to try: http://nourishnetwork.com/2011/04/01/yum-stuffed-chicken/ , http://nourishnetwork.com/2011/01/21/cuban-style-millet-con-pollo/ , http://nourishnetwork.com/2010/09/15/chicken-and-snap-pea-stir-fry-with-sticky-sweet-sauce/. Thanks so much, Lia! Those recipes are right up our alley, and I look forward to giving them a try.
